Zutaten für 6 Personen:
500 g Pastinaken
250 g mehlig kochende Kartoffeln
1 EL Butter
80 ml Weißwein
1 Liter Brühe
Muskat, Salz und Pfeffer
375 g Sahne
1 EL Butter
1 EL gehackte Petesilie
Für die Deko schneiden wir zuerst 18 dünne Scheiben von der Pastinake ab. Die restlichen Pastinaken und die Kartoffel werden in kleinen Würfeln geschnitten und mit Butter angedünstet. Dann mit Weißwein ablöschen und einkochen lassen. Anschließend mit mit Brühe aufgießen, würzen und ca. 15 Minuten mit dem Deckel köcheln lassen. In der Pfanne die Butter schmelzen und die Pastinakenscheiben knusprig braun braten. Mit dem Pürierstab die Suppe feinpürieren und 300 g Sahne mit untermixen und noch einmal abschmecken. Die restliche Sahne steif schlagen. Die fertige Suppe auf einem Teller servieren mit einem Klecks Sahne, den gebratenen Pastinaken und der gehackten Petersilie servieren.
